Why do brewers use barley instead of other grains?

Brewers use barley to make malt for the following reasons;

    1. Availability and flavor
    2. Barley malt has a husk which permits easy separation of the wort
    3. Barley malt is high in starch degrading enzymes which yield sugar for the fermentation.
    4. Many other minor factors

There are other grains used in brewing; rye, wheat, sorghum etc. They are generally used at fairly low percentages because they do not possess all of the above positive attributes.
Why is home brewed bier so often cloudy?

The turbidity (cloudiness) in home brewed bier is mainly the result of haze forming proteins. They are totally natural and neutral in flavor, their main effect is the detraction from the product appearance. Some of the haze forming proteins are separated during the boil as they coagulate and settle to the bottom in the whirlpool. The majority, however, are separated during filtration. Most breweries filter their bier as the majority of consumers expect bier to be clear. Our Hefeweizen, is of course an exception as this style of bier is supposed to be cloudy.

Why don't you make any lagers? I would think that after your blackbier that a schwarzbier would be in the making?

Widmer's first lager will be introduced in June 1997. Look for our Czech Pilsner in your favorite establishment.

Just had some of your hefeweizen - even cloudier than the Germans! Tell me why so cloudy? Love the flavor!

America's Original Hefeweizen isn't filtered before kegging or bottling, so our special Altbier yeast is left suspended in the bier after fermentation. In addition to the cloudy appearance, the lemon is a German tradition that enhances the fruity, tangy character of the Altbier yeast.

Why is your yeast so special and unique?

Our alt bier yeast is so unique because...it is so unique. These days many microbrewers use the same or similar strains, often maintained and prepared for them by commercial labs. Also, less meticulous brewers often end up with combinations of different strains, and/or wild yeast or bacteria in their cultures due to poor handling procedures. Ours is our own proprietary pure culture, has seen hundreds of years of use as a brewing yeast in Germany, and is maintained in our own lab.

Will I be able to buy Hefeweizen any time soon in Philadelphia?

Unfortunately, laws and regs prohibit us from shipping direct. However, we are considering rolling into Florida in the next few years.

Why is your bier unfiltered?

Yeast is what matures the bier, and when it's finished it settles to the bottom. When ours stayed suspended, we knew it was special. It was spending more time maturing the bier. Our Hefeweizen, is America's Original Hefeweizen. It doesn't look like any other beir and it doesn't taste like any other bier. By leaving it unfiltered, you are able to taste the yeast, the wheat, the hops, everything.

Are you planning to introduce your products to Ohio? Having just moved back to Ohio from PDX, I can't find a good beer! At least ten years behind PDX, and they think Hefeweizen should be filtered!

What does the funky Prost's mean on the bottle caps?

Will the black bier be available in Atlanta?

Unless the liquor laws change in Georgia, we will not be able to sell Blackbier in Atlanta. The alcohol percentage of Blackbier, 5.0% by weight, exceeds the limit set by the state.

What is the difference between ale, lager, porter, stout, etc.? My taste buds can tell that they're different, but I need to know why?

Ale

  • Uses a top fermenting ale yeast
  • Fermented at a relatively high temperature (65-70 F)
  • Uses traditional Ale hops
  • Tend to be estery in character (a result of using ale yeast)
Lager
  • Uses bottom fermenting lager yeast
  • Fermented as low as 35F depending on the yeast strain
  • Cold aged longer than ales ( to "Lager" means to age)
  • Tend to be crisper and dryer than ales
  • Uses traditional Lager hops
Porter
  • An ale made with a variety of roasted malts for color and flavor.
  • Roasted Barley, chocolate malt, and Black malt are often used.
Stout
  • Very similar to a porter but there are differences in alcohol and residual sugar content.
  • Guinness (the signature Irish Stout) for example is much dryer than a porter.
  • Sweet stouts are also produced in some cases. Sweet stouts are sometimes referred to as Milk Stouts because they are sweetened with lactose.

What's your fall and winter beers like?

We offer Oktberfest in the fall and Winternacht in the winter. Oktoberfest is medium bodied and deep amber in color. It has four malted barleys and choice Tettnanger and Mt. Hood hops. Our Winternacht, is a copper-colored German Altbier and is characterized by its rich warming effect and its hearty balance of six malts and two unique hops.

The closest distributor is Chicago Beverage Systems in.... Chicago. We should be covered in the entire state of Illinois by the end of the year, but unfortunately we will not be going into MO in the near future.

In the brewing process, the vats are primarily copper. Is there any reason for that other than copper is a great conductor of heat?

Copper use to be the preferred material, not only for its heating qualities but it was also believed that the copper ions were an important nutrient for the yeast. Today, stainless steel is preferred. Stainless steel vats are much easier to clean and maintain as a sterile environment.

I don't have a question about beer, but rather stocks. Is Widmer Brothers a private company or public? If public, are you traded on the New York Stock Exchange? I really love your biers!

Most, but not all.

Where do your hops come from?

The Yakima Valley of Washington, for the most part.

What happens when bier goes flat?

Definition of carbonation: "the presence of carbon dioxide gas in solution in a liquid." Liquids remain carbonated if kept under pressure. If the crown is removed, the CO2 will come out of solution and return to it's gaseous state in the atmosphere. The warmer the beer, the faster the process. By definition, beer without CO2 is referred to as "flat".

I love your wheat beer, but really would like to have the recipe for beer cheese to serve as an appetizer.

    Bier Cheese



    4 lbs. grated cheese (use a blend of 75% cheddar,



    25% scraps of any other cheese)



    3/4 lbs cream cheese



    1/2 medium onion



    2 oz. Worcestershire sauce



    1/4 cup dry mustard



    1 tbsp salt, kosher



    2 1/2 cups Widmer Weizen bier



    2 oz. bleu cheese crumbled



Add cheeses, onion, Worcestershire, mustard and salt together in Hobart mixing bowl. Blend together completely using paddle attachment. While mixer is still running, slowly add bier until it is entirely incorporated.

Do you recommend your Hefeweizen to be placed in a portable "Party Pig"?

I can't think of a reason not to.

We like the profile created by leaving our Hefeweizen unfiltered and natural. We bottle and keg our Hefeweizen right from the fermentation tank and believe this allows you to taste more of the bier's unique flavors.

I can only speculate since I am not familiar with this series. Anthropologist have speculated that the cultivation of grains for beer led to civilization.

I read in the Oregonian that Widmer products need to be refrigerated. Widmer is being marketed in floor displays at room temperature in several local grocery stores. Is this acceptable?

Any brewer will tell you it is his/her preference to have the bier kept refrigerated. Widmer biers are brewed to the highest quality standards and tolerate room temperature very well. However, all biers will maintain their quality longest if kept cold.

All Widmer Brothers biers are brewed in our own brewery in Portland and we own the tanks.

No, I simply went over there, reviewed my brewing plans with a director (Prof. Dr. Geiger); he recommended one strain plus the strain of Zum Uerige in D sseldorf. I gave him a check and they sent it by air to Portland.
