The turbidity (cloudiness) in home brewed bier is mainly the result of haze forming proteins. They are totally natural and neutral in flavor, their main effect is the detraction from the product appearance. Some of the haze forming proteins are separated during the boil as they coagulate and settle to the bottom in the whirlpool. The majority, however, are separated during filtration. Most breweries filter their bier as the majority of consumers expect bier to be clear. Our Hefeweizen, is of course an exception as this style of bier is supposed to be cloudy.

America's Original Hefeweizen isn't filtered before kegging or bottling, so our special Altbier yeast is left suspended in the bier after fermentation. In addition to the cloudy appearance, the lemon is a German tradition that enhances the fruity, tangy character of the Altbier yeast.

Our alt bier yeast is so unique because...it is so unique. These days many microbrewers use the same or similar strains, often maintained and prepared for them by commercial labs. Also, less meticulous brewers often end up with combinations of different strains, and/or wild yeast or bacteria in their cultures due to poor handling procedures. Ours is our own proprietary pure culture, has seen hundreds of years of use as a brewing yeast in Germany, and is maintained in our own lab.

Yeast is what matures the bier, and when it's finished it settles to the bottom. When ours stayed suspended, we knew it was special. It was spending more time maturing the bier. Our Hefeweizen, is America's Original Hefeweizen. It doesn't look like any other beir and it doesn't taste like any other bier. By leaving it unfiltered, you are able to taste the yeast, the wheat, the hops, everything.

We offer Oktberfest in the fall and Winternacht in the winter. Oktoberfest is medium bodied and deep amber in color. It has four malted barleys and choice Tettnanger and Mt. Hood hops. Our Winternacht, is a copper-colored German Altbier and is characterized by its rich warming effect and its hearty balance of six malts and two unique hops.

Copper use to be the preferred material, not only for its heating qualities but it was also believed that the copper ions were an important nutrient for the yeast. Today, stainless steel is preferred. Stainless steel vats are much easier to clean and maintain as a sterile environment.

Definition of carbonation: "the presence of carbon dioxide gas in solution in a liquid." Liquids remain carbonated if kept under pressure. If the crown is removed, the CO2 will come out of solution and return to it's gaseous state in the atmosphere. The warmer the beer, the faster the process. By definition, beer without CO2 is referred to as "flat".

Bier Cheese 4 lbs. grated cheese (use a blend of 75% cheddar, 25% scraps of any other cheese) 3/4 lbs cream cheese 1/2 medium onion 2 oz. Worcestershire sauce 1/4 cup dry mustard 1 tbsp salt, kosher 2 1/2 cups Widmer Weizen bier 2 oz. bleu cheese crumbledAdd cheeses, onion, Worcestershire, mustard and salt together in Hobart mixing bowl. Blend together completely using paddle attachment. While mixer is still running, slowly add bier until it is entirely incorporated.
